Ingredients
- 3 slices bacon
- 1 onion, chopped
- 1 green bell pepper, seeded and chopped
- 3 stalks celery, finely chopped
- 2 tablespoons minced garlic
- 5 cups diced red potatoes
- 1 pound crawfish tails
- 1 can chicken broth
- 1 pint half-and-half cream
- salt and pepper to taste
- 2-3 cups milk
- 1 bunch green onions
- 1/4 cup flour
- 1 cup shredded Cheddar cheese, optional
Directions
Place the bacon into a large pot over
medium-high heat. Cook until crisp, turning as needed.
Reduce the heat to medium, and add the onion,
green pepper, , celery. and garlic. Cook and stir until the onion is
transparent, and the peppers are soft. Add diced potatoes and add broth, cook until slightly softened- adding a little water to cover potatoes.. Add the crawfish, and bring to a boil.
Reduce the heat to low and stir in the half-and-half, and heat
through. Season with salt and pepper to taste. Ladle into bowls
and garnish with Cheddar cheese to serve.
